As a cookie connoisseur, it says a lot when Deb Shafer calls out her Chocolate Cappuccino Cookies as a favorite.

“One of my friends and I get together a week or so before Christmas and bake hundreds of cookies. We give them out to family and friends each year.”

Chocolate Cappuccino Cookies

Ingredients:

❖ 2 cups butter, softened

❖ 4 cups packed light brown sugar

❖ 4 eggs

❖  5½ cups of all-purpose flour

❖ 1 cup unsweetened baking cocoa

❖ ¼ cups instant coffee granules or crystals

❖ 1 teaspoon baking powder

❖ 1 teaspoon baking soda

❖  1 teaspoon salt

❖ 1 bag (10oz) cinnamon-flavored baking chips

Directions: 

❖ Heat oven to 350 degrees. Spray cookie sheets with cookie spray (I prefer parchment paper).

❖ In large bowl, beat butter on medium speed until creamy. Gradually add brown sugar, beating well. Add eggs, beating until blended.

❖ In another large bowl, mix flour, cocoa, coffee granules, baking powder, baking soda and salt.

❖  Gradually add to batter mixture, beating on low speed just until blended. Stir in cinnamon chips.

❖ Drop dough by rounded tablespoonfuls about 2 inches apart.

❖ Bake for 8 to 10 minutes. Cool for 5 minutes; remove from cookie sheets to cooling racks.
